Sugar Free Muffins

Dead bored of chocolate or just looking for a light bite? Pull out some vanilla and let’s roll with these sugar free muffins!

Tested on children and approved by teachers in the SunCakeMom Summer Baking Camp. Easy to prepare sugar free recipe not only for the faint of heart. Whip it up in 5 minutes and enjoy them for the rest of the day!Vanilla-muffin-2-SunCakeMom

Ingredients

This recipe yields 24 muffins.

  • 6 Eggs (medium)
  • 1 tablespoon Vanilla extract
  • 3 tablespoons Honey or sweetener of choice
  • 1⅔ cup / 200g Flour
  • 1 tablespoon Baking powder
  • 6 tablespoons Water (optional)
  • Decoration:
    • Crushed almond
    • Chocolate chips
    • Blueberry
    • Raspberry

How to make Sugar free muffins

  2. Beat egg whites until hard peaks form. Beat-egg-whites-gp-SunCakeMom
  3. Mix vanilla yolk and honey or sweetener of choice then beat egg yolks until light yellow. (If bananas are used as sweetener make sure they are ripe and mashed)Beat-egg-yolk-gp-SunCakeMom
  4. Mix flour with baking powder then carefully fold in the flour with the egg yolks. If the batter is too hard to stir, add some water one spoon at the time.
  5. When there is an even mixture fold in egg whites to an even texture.
  6. Fill pastry into the muffin holders. 2 or 3 spoonfuls into one holder. Vanilla-muffin-process-3-SunCakeMom
