Jammie Dodgers – Thumbprint Cookies Recipe

Life can be complicated especially if we make it so. Not like it would be easy to dodge the responsibilities when all the world is urging us to abide by them.

After all, we are social beings whose mere existence was pegged on being nice with one to another for centuries. We even have a “be nice with each other” day once a year.

Well, it’s rather called a lover’s day in some countries but the main idea is the same, buy something for somebody. Of course, this wasn’t always the case but since our life has been degraded to lingering around shopping centers, we can’t do much about it, can we?

There were times when sending a simple post card with little hearts and charming words did the trick but that has been left for our children to play with at school. We are grown-ups now and expected to move the economy forward.

Our deeds are the pillars of our society, thus we shall not falter if we want to keep it intact for the next generation. The question is if we want it to or not.

Sure enough, showing our appreciation of fellow human beings, especially of those who are in our inner circles is highly encouragable and serves as a base for peaceful society. The materialization of this affection is though highly questionable.

Bottling all our love up to be presented in heart shaped boxes may sound immeasurably romantic in dimmed TV commercials with a faint sound of violin in the background. Unfortunately, the reality of overbooked restaurants with running waiters and half cooked food could ruin the bonding of two souls altogether.

If we haven’t succeeded to get into the restaurant bandwagon, worry not, there are sweets and treats that we can buy for our loved ones that usually are appropriately overpriced so nobody feels underappreciated when presented with such sweet moments.

Not many things are better in life than cuddling into a deep sofa and binging on life’s great pleasures one after the other. Given that we aren’t hooked on adrenaline of course because a night like this would be the death sentence for any relationship then.

Dodging Valentine’s Day altogether is a challenge not many dares to venture these days. At the end who would not like to be loved or more importantly could bear the wrath of his girlfriend?

Luckily, we can dodge Valentine’s Day without maxing out our credit cards though. The Brits have a lovely little linzer cookie called Jammie Dodgers that is perfect for such occasions.

The cookie is named after a cartoon character Roger Dodger whose life consist of dodging his responsibilities towards society (homework, chores and such) as many ways as possible.

The cookie itself lives in such spirit as requires little tools or preparations while still lives on as a cookie to save the day.

Being a cookie, it doesn’t rely on the elastic properties of gluten to hold itself together so the white flour can be substitute with many kinds of flour like rice as in this gluten free cookies or almond flour like in this gluten free gingerbread.Jammie-dodgers-recipe-2-SunCakeMom

Ingredients:

  • 1 lb / 500g flour
  • 2 stick / 200g Butter (room temperature)
  • 3 tablespoon / 50ml Milk
  • 3 tablespoon Agave syrup or sweetener of choice
  • 1 teaspoon Vanilla extract
  • 2 Eggs
  • 1 teaspoon Baking powder (follow instructions on packaging)
  • 3½ oz / 100g Strawberry or raspberry jam for filling

How to make Jammi dodgers:

  1. Set oven onto 350°F / 180°C.
  2. Prepare trays with parchment paper.
  3. Put all ingredients in a medium size mixing bowl and work it together by hand until getting an even dough.Jammie-dodgers-recipe-Process-2-SunCakeMom

  9. When cookies completely cooled down, s store them in an airtight container.
