Jammie Dodgers – Thumbprint Cookies Recipe

Ingredients

  • 1 lb / 500g flour
  • 2 sticks / 200g Butter (room temperature)
  • 3 tablespoon / 50ml Milk
  • 3 tablespoons Honey or sweetener of choice
  • 1 teaspoon Vanilla extract
  • 2 medium Eggs
  • 1 teaspoon Baking powder (follow instructions on packaging)
  • 3½ oz / 100g Strawberry or raspberry jam for filling

How to make Jammi dodgers

  1. Put all ingredients in a medium size mixing bowl and work it together by hand until getting an even dough.Jammie-dodgers-recipe-Process-2-SunCakeMom
  2. Make walnut size balls out of the dough and place them on the parchment paper lined tray leaving some space between them.Jammie-dodgers-recipe-Process-3-SunCakeMom

  7. When cookies completely cooled down, s store them in an airtight container.
