Easy Rice Pudding Recipe

Fancy something sweet but fed up with baking? Worry not because with a whip of a spoon, we can make a delicious dessert on the cooktop too!

 

Before gluten free was a thing rice was not widely considered as a base for dessert. Probably not even considered today but people now have heard about making things from rice flour and such. Therefore making something sweet from rice isn’t as strange as years ago when the only dessert made from rice was rice pudding.  It’s passed down from mother to daughter for generations. No advanced skill needed just a couple of minutes at the cooktop.

Then here it is a naturally gluten free dessert. It didn’t need any trick or modification just plain rice and milk. Traditionally we should put sugar into it to make it from somewhat edible to delicious but we substitute that with a more natural ingredient like honey. This won’t make it anywhere near sweet enough to be enjoyable if we are just got off sugar so adding some natural candies will tilt the scale into the territory of deliciousness and healthiness.Rice pudding recipe - SunCakeMom

Ingredients

Rice pudding

  • 1 cup / 190g Rice
  • 6 cups / 1.5L Milk or milk substitutes
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Honey or sweetener of choice
  • 2 tablespoon / 30g Butter
  • Optional
    • 1 teaspoon ground Cinnamon
    • ¼ cup / 50g Raisins

Fruit sauce

  • 1lb / 500g Fruits of any kind
  • ½ cup Water

How to make Rice pudding

  2. Pour the milk in, put the lid on and bring it to boil while stirring it every now and then.Rice pudding recipe - SunCakeMom
  3. Stir in vanilla extract, sweetener, optional cinnamon and raisins.Rice pudding recipe - SunCakeMom
  4. Put the lid back on and cook it on low heat until the rice begin to be visible due to the dense simmering milk won’t let it sink. It takes about 30 minutes.Rice pudding recipe - SunCakeMom
  5. Add the butter then put lid on and cook it further on low heat until the desired density is achieved. Rice pudding recipe - SunCakeMom
  6. It shouldn’t take longer than 15 more minutes. Also keep in mind that once the rice pudding cools down it will further thickens.Rice pudding recipe - SunCakeMom

Fruit sauce

  1. Rinse and peel the fruits of our choice. It can be any kind of fruits lying around doomed to be wasted yet found new purpose on a rice pudding.Rice pudding recipe - SunCakeMom

  3. Add them onto a frying pan with a bit of water.Rice pudding recipe - SunCakeMom
  4. Put the lid on and on medium heat cook them for about 10 – 15 minutes.Rice pudding recipe - SunCakeMom

Assembly

  1. Serve the rice pudding onto cups and pour the fruit sauce on top.
  2. Sprinkle cinnamon on top if desired.

What Rice is best for making rice pudding?

Depends on what are we after in texture. Long grain rice tends to stay together better during cooking and provides a more grainy experience while the short grain rice makes a smoother mushier experience.

Is homemade rice pudding good?

Homemade food is as good as we make it so if we use healthy ingredients we will make healthy food. Rice is not the most nutritious food on Earth though so try to refrain from basing any diet plans on rice pudding alone.

How to thicken rice pudding?

Rice pudding should thicken on its own by soaking up the liquid added to it. If for some reason too much liquid was added to it we can simply cook away the excess amount. In case we don’t want to get rid of the liquid we can stir in whisked egg yolks that will thicken up the milk. In emergency situations corn starch or plain white flour can be added in too. Keep in mind that rice pudding will gets firmer as it cools.
