Nowadays most of us don’t really feel anything about such a struggle though as simply living in modern society with an average job can fulfill not just our basic needs but let us achieve our full potential as a human being.
Yet, these needs are still hardwired in every one of us and if we feel any of those needs are threatened by any external factors, it goes straight to our heart. This is how political advert manipulate our decisions by suggesting threats to our livelihood; lifestyle adverts convince us to buy prestige products or furniture shops make us buy into their brand with cinnamon rolls.
Roman spice traders introduced the Sri Lankan cinnamon to Europe. It took some time but once it reached the land of Vikings, there was no one in its way to stop its conquest.
Cinnamon made its ways into rolls and just as the flatpack furniture reached the boundaries of other nations so did cinnamon rolls. It’s worth to mention that rolls were and still very popular across many European countries with various other kind of flavoring, like chocolate or vanilla, but the cinnamon is the only one that reached to world fame.
Its spread was probably influenced by Ikea’s granny style of client capture strategies. After all, there is no purer form of expressing one’s love to another than feeding them with the food they love. No wonder, we think fondly of grannies that cook better and appreciate passionately furniture shops that feed their customers.
Yet, the best grannies are those that go with the flow of time and able to ride on the tides of food trends. Making cinnamon rolls available for those grandchildren that are plunge into gluten free, paleo or low carb lifestyles either by need or choice.
Going low carb with cinnamon rolls isn’t particularly hard but depending on what’s our idea of cinnamon rolls, it can be challenging too. We can go with a couple of simple ingredients recipe to more complex chemistry in pursuit of perfect cinnamon rolls.
Luckily, at the end, it doesn’t really matter what dough was used to bring the flavor of cinnamon closer to our heart because what matters is the love that the cinnamon rolls were made with.
Ingredients
Filling
- 4 tablespoons / 50g Butter
- 2 teaspoons / 5g Cinnamon (ground)
- Sweetener to taste
Frosting
- 3 tablespoons / 70g Creme cheese
- 2 tablespoons / 50g Greek yogurt
- ½ teaspoon / 4ml Vanilla extract
- Keto sweetener of choice to taste
Beginner Dough
- 2 Egg yolks
- ½ teaspoon / 2ml Vanilla extract
- 1 ¾ cups / 170g Almond flour
- 1 teaspoon / 5g Baking powder
- 1/2 teaspoon / 3g Salt
- Keto sweetener to taste
Advanced dough
- 3 Eggs
- ½ cup / 60g Coconut flour
- 2 tablespoons Baking powder 11g
- 2 tablespoons / 30g Butter (melted)
- ½ teaspoon / 3ml Vanilla extract
- Keto sweetener to taste
- 2 ½ cups / 250g Mozarella
- 2 oz / 55g Cream cheese
Overkill dough
- 2 cups/ 200g Almond flour
- 2 tablespoon / 20g Coconut flour
- 1 tablespoons / 11g Baking powder
- 250g Mozarella
- 2 oz / 55g Cream cheese
- 3 Eggs
- 2 tablespoons / 30g Butter (melted)
- ½ teaspoon / 3ml Vanilla extract
- Keto sweetener to taste
How to make Keto cinnamon rolls
Filling
- Whisk butter until white, fluffy and creamy.
- Add cinnamon and sweetener to taste.
Frosting
- Whisk creme cheese until creamy. Add yogurt, vanilla extract and sweetener of choice.
Beginner dough
- Mix all the ingredients together, preferably with an electric whisk.
- Gather the dough into a ball. We probably need to oil our hands for this.
- Place a parchment paper onto a working surface and roll the dough out. Thicker dough will result in thicker layers while thin dough will make thin layers.
- Spread the filling on top. Alternatively, simply sprinkle the cinnamon and sweetener on top of the dough, leaving the butter out.
- Roll the dough up.
- Cut the roll into 1″ / 2.5cm slices.
- Place the cinnamon rolls onto a parchment paper layered baking tray.
- Put them into a 390°F / 200°C preheated oven until golden brown spots start to appear, about 15 – 20 minutes. If short on time, just microwave them at max for 45 – 90 seconds a pop.

- Stir. Place it back for another minute then stir again.
