Chocolate Oatmeal Cookies Recipe
What’s better than having a nourishing breakfast or afternoon snack in the form of an oatmeal cookie? Having it in chocolate flavor!
The fun bit is that these healthy cookies are so easy to make we can even prepare them with our low carb breakfast. In fact if there is some leftover oatmeal from our breakfast we can pop that into the oven and in 15 minutes we have some bonus snack for the day. However oat is not that of a low carb as it is slow carb meaning our body digest it slowly so if we are on a no carbohydrate diet this meal wont cut it but if we want to save a few calories here and there then this is a perfect sugar free recipe.
Ingredients
- 1 cup / 250g Butter (room temperature)
- 16 oz / 500g Quick oats (ground)
- 2 Bananas
- 2 Apples
- Some dried fruit (raisins, apricot, blueberries)
- 3 Eggs
- 1 teaspoon Baking powder
- 4 teaspoon Cocoa powder (unsweetened)
How to make Chocolate oatmeal cookies
- Grind the oat and pour it into a big bowl. It’s an optional step skip it for a more oatly experience.
- Squash the bananas, grate the apples, cut up whichever dried fruit we chose to use and put them into the bowl with the eggs, baking powder and the cocoa powder.
- Cut the butter into slices mix and dough the whole paste until even and smooth.
- Drop spoonfuls of dough onto the baking tray. Flatten them slightly.
- Place them into a 356°F / 180°C preheated oven and bake them for about 15 minutes.

Can quick cooking oats be used in cookies?
Yes, quick oats and old fashioned rolled oats are interchangeable in most recipes. I oat cookies the old fashioned rolled oats will may be a bit more chewy but other than that there will not be much difference.
Why do cookies get hard after they cool?
Cookies get hard because they dry out. We can deal with it by placing the cookies into an airtight container and slow the process down. Unfortunately, we can’t stop evaporation and keeping it close to the cookies sooner or later mold will appear and devour the cookies. Keeping them in the fridge helps.
