Chicken Stuffed Avocados Recipe

Life is full of incredible things. Like it’s a miracle that we even have avocados given the evolutionary properties of fruits or in fact any living organism in general.

According to evolutionary theory any living thing co-develops properties with its surroundings responding to needs of own survival on short term and ensuring the survival of the species.

This is why animals develop hides that blends into their surroundings helping them hunt or escape when need arises. It’s strange as it sounds same evolutionary mechanism that gives peacock fancy feathers, helps seeds develop flesh around them.

Well, developing may be a bit of a stretch to be honest as no living organism is capable of altering its appearance at will. If that were the case plastic surgeons weren’t be held in rock star status.

Evolution is a slow process with many failure and very little progress from one generation to the other, but this is how those who can change survive and those who can not perish.

It’s a lesson that should be more widely distributed in all the schools around the world. It’s a pretty hard pill to swallow in a society where we spend extraordinary efforts and time to lock out as many unexpected factors as possible.

We associate safety with stability which is nevertheless true on the mid-term but disastrous on the long-term. Luckily, we haven’t yet ended up where the dodo is today but the longer one tries to stick to the old ways of doing things in an era where old environmental factors do not apply anymore, the sooner one perishes.

Except, of course if the new environment will not bring doom but prosperity so one can flourish without the need of change. Like in the case with avocados today besides of course with many fruits, we consume.

Strange as it may seem avocados are fruits more precisely berries with a single seed that is surrounded by the flesh of the fruit. Fossils date avocados back to days when the intestines of huge berry eating animals could cope with such seeds without cracking them, ensuring the distribution of the plant and surviving of the species.

When the big things died the avocado must have been in quite an existential crisis as its chances to distribute its seed started to equal to a social influencer in a c-suite meeting.

Luckily though, humans have developed quite an appetite for this strange fruit and nowadays its widely distributed around the globe and grown in many places.

Probably the fact that it was recently elevated into a superfood status on social media played the role in this, as avocados were virtually unheard of before, and now we stuff everything with them.

Or rather we even stuff the avocados with everything. Like this half scooped out avocados filled with grilled chicken pieces and herbs. To be honest this could be eaten separately without much fiddling with all the ingredients but that wouldn’t make a pretty party dish to show off with.

As chicken with mayo and herbs is almost an unbeatable spread, there isn’t much that the bland tasting avocado can add to it, except being a fancy shell where we can scoop the creamy filling out from.

Of course, we can use this lovely spread on top of various kind of bread like this almond flour bread which fits into any keto or gluten free diet too, or use it in not so low carb but very suitable dishes like arepas.Chicken-stuffed-avocados-4-SunCakeMom

Ingredients:

  • 2 Avocados
  • 200g Roast chicken (boneless, finely cut)
  • ½ Red onion (diced)
  • 1 teaspoon Dijon Mustard
  • 2 teaspoon Sour cream or creme fraiche
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper (optional)

How to make Chicken stuffed avocado:

Ingredients

  • 2 Avocados
