Total Time 25minutes
1tablespoonHoney or sweetener of choice
7oz/ 200g Fruits of choice
½cupWhipping cream for decorationoptional
Pour rice, boiling water, milk, honey and the vanilla into a medium size saucepan.
Cook it in medium to low heat, stir time to time. Do not let the rice to stick at the bottom of the saucepan as after that it can burn fast and burnt rice hasn't got pleasant taste.
Keep cooking it until see only a little bit of liquid on the top. Electric cook tops can be turned off now as the remaining heat of the heating element should be enough to cook the rice ready. On a gas cooktop lower the heat to minimum.
Put the lid on top of the saucepan and leave it until the rice soaked in all the liquid.
In the meantime wash, dry and chop up the fruit of choice.
Check rice if it's cooked properly. It should be soggy and soft. (If it's too hard it may need a bit more milk into the saucepan and leave it longer.
In the meantime whip the cream.
When rice is cooked, start put it into bowls. Layers look cool: rice, fruit, rice, fruit, whipped cream, fruit.
When it's finished pop them in the fridge to cool or serve them straight.
On hot summer days it's perfect dessert straight out of the cold fridge. In the winter we can serve it hot without cream straight after it is ready. In either way, fruit rice is a delicious dessert for any day of the week.
