Instructions
With an electric beater, mix together coconut flour, salt, sweetener, eggs, vanilla extract and coconut oil or butter. If chocolate chips are used instead of melting the chocolate, add those too.
Gather the dough into a ball. Use wet or oily hands if the dough is too sticky. Place the dough between two parchment paper and roll it out as thin as we'd like our cookies to be.
Cut the cookies out.
Place the cookies onto a parchment lined baking sheet.
Bake them in the middle rack of a preheated 350°F / 180°C oven until the edge starts to turn brown, about 10 minutes.
Melt chocolate.
Dip the cookies into chocolate then right after into the desiccated coconut. Let the cookies dry.
