Green Bean Soup Recipe

Low in carbs high in nutrients and quick to prepare. Add some spices and a thought of sour cream to make a lovely soup to please anyone.

  • ½ cup / 100ml Oil
  • 2 medium Onion diced
  • 2 Carrot diced
  • 1 Celery stalk diced
  • 1 teaspoon Salt
  • 1 clove Garlic crushed
  • 1 Bay leaf
  • 2 oz / 50g Smoked meat like Bacon Chorizo or Serrano ham (diced or sliced)
  • 1 lb / 500g Green beans
  • ½ teaspoon Paprika
  • 7 ½ cup / 1.8L Water
  • 8 oz / 300g Carrots optional (sliced)
  • 2 tablespoon Sour cream
  1. Pour oil into a pot and add the diced onion, carrot and celery.
  2. Add salt and saute until the onion gets a glassy / translucent look.
  3. Throw the bay leaf and the crushed garlic in then saute until fragrant.
  4. Mix in the sliced or diced smoked meat as well.
  5. Pour in the green beans then add the water.
  6. Spoon in the paprika and any other optional vegetables like carrots.
  7. Bring it to boil and simmer it for 10 minutes or until the vegetables get the desired texture.
  8. Mix in the sour cream and let it settle for a couple of minutes before serving.
