Keto Low Carb Chocolate Cheesecake Recipe

Delicious cream cheese mixed with scrumptious chocolate while placed on a ground nut base. If that's not irresistible the chocolate glaze on top should be.

Ingredients
Base:
  • 7 oz / 200g Almond flour or ground almond
  • 3 tablespoon / 50g Butter unsalted melted
  • 1 tablespoon Agave syrup or sweetener of choice
  • 1 tablespoon Cocoa powder unsweetened
Cream:
  • 1 lb / 500g Cream cheese
  • 8 oz / 200ml Sour cream
  • 3 tablespoon Agave syrup or sweetener of choice
  • 3 medium size Eggs
  • 1 tablespoon Vanilla extract
  • 8 oz / 200g Chocolate melted
Glaze:
  • cup / 150ml Heavy cream
  • oz / 100g Chocolate melted
Kitchen utensils:
  • Ø6½" / Ø16.5cm Baking tin
Instructions
  1. Heat the oven to 350°F / 180°C.
  2. Prepare cake tin with parchment paper.
  3. Combine base ingredients, ground almond, agave, cocoa powder and melted butter in a medium size bowl.
  4. Press the crust mixture evenly into the bottom of the cake tin.
  5. Prepare the cream. Break and melt chocolate in a medium size bowl and put it aside as it's better not to mix it too hot with the other ingredients.
  6. Put cream cheese, Agave syrup, sour cream, and vanilla extract into a mixing bowl and whisk them together evenly.
  7. Put eggs into the mixture one by one.
  8. Make sure they are incorporated well.
  9. Turn off beater and fold melted chocolate into the cream.
  10. Mix the chocolate with the cream evenly.
  11. Pour cream into the cake tin and put it in the preheated oven for 40 minutes.
  12. After 40 minutes turn the heat down to 302°F / 150°C and leave the cake in for another 30 minutes.
  13. Meanwhile melt chocolate with the heavy cream. Stir it frequently until chocolate is completely melted and incorporated with the heavy cream.
  14. Take the cake out of the oven.
  15. Let it cool down.
  16. Cut the top off if the middle falls too deep down.
  17. Pour melted chocolate glaze on top.
  18. Spread some chocolate around the side as well.
  19. Leave it in the fridge over night before serving it.
