Ingredients

2medium Eggs
⅛ - ½cup Plain white flour or Breadcrumbs or Matzo meal
1teaspoonSalt

Instructions
Scrub the potatoes clean. No need to peel them but scrubbing may take off some of the skin anyway.
Shred the potatoes and the onion. Food processor can be used for the onion but it cuts the potato up too small ruining its stringiness.
Place the shredded potatoes and onion in the middle of a cheese or kitchen cloth.
Close it up and squeeze out as much liquid as possible collecting it into a bowl.
After some time, potato starch will settle at the bottom of the bowl. Slowly pour off the liquid, we end up with potato starch that will be added back to the latkes.
Place the squeezed out potato and onions into a bowl then add salt and any other optional spices like black pepper.
Mix in eggs and flour. Traditionally matzo meal is used that can be substituted with breadcrumbs or plain white flour.
Heat oil in a skillet to medium low then spoon in a couple of dollop latkes.
With a fork, press them to desired thickness.
Once the bottom gets that lovely golden brown color, in about 1 - 3 minutes, flip them over.
Fry the other side to golden brown perfection in another 1 - 3 minutes, then take them out where the excess oil can drip off.
