Instructions
Coconut flour pizza crust:
Preheat the oven to 350°F / 180°C.
Measure the mozzarella and the cream cheese into a bowl.
Put them into the microwave until they melt together for about 90 seconds on maximum power. Halfway through take the bowl out and stir them around a bit.(In case of missing microwave warm them over hot water, similarly to chocolate)
While the Cheese melts beat up the eggs quickly.
Mix in the Coconut flour.
Mix the melted cheese in, too. This is going to be a bit tough. As the cheese cools off, it's going to be even harder. Luckily, we can put the whole thing back to the microwave for a couple of seconds to reheat it if necessary.
Mix until our dough becomes even consistency.
Cut out a pizza size circle shape from parchment paper and put the dough in the middle of the parchment paper.
Place another parchment paper on top. This doesn't need to be circle shaped.
Spread out the dough to the size of the circle shaped parchment paper.
Take the top parchment paper off.
Correct any mistakes on our future crust.
Place the low-carb pizza dough into a 350°F / 180°C preheated oven for 15 - 25 minutes.
Almond flour pizza crust:
Measure all the ingredients into a bowl.
Mix them evenly together.
Cut out a pizza size circle shape from parchment paper then put the dough in the middle of the parchment paper.
Place another parchment paper on top. This doesn't need to be circle shaped.
Spread out the dough to the size of the circle shaped parchment paper.
Take the top parchment paper off.
Correct any mistakes on our future crust.
Place the low-carb pizza dough into a 350°F / 180°C preheated oven for 15 - 25 minutes.
Assembly:
Spread 2 -3 tablespoons tomato sauce on top of the crust. Mind to spread the tomato all the way to the side of the crust,
especially if it has already got a golden brown side, otherwise it will burn black. This will burn:
Sprinkle cheese on then place the mozzarella.
Add any other toppings.
Put the pizza into an upper rack in the oven at 400°F / 200°C until the mozzarella gets the lovely golden brown spots for about 10 minutes.
If we put the pizza on too high rack on too high temperature and on top of all, we didn't spread the tomato all the way to the sides, our pizza will be black while the cheese still white. Yin and yang is not good for pizza.
No worries though, just cut off the embarrassing parts and we are good to go.
