Keto Shortbread Cookies Recipe

How hard life is when cookies are taken away from us. Cookies are invisible part of our life that seems so insignificant that it isn’t even worth mentioning. Many of us don’t even recognize when a cookie pops into our mouth when walking by the cookie jar.

If anybody questions about our habit of having desserts or sweets, interestingly cookies, especially the ones that aren’t made with a lot of sugar, are slipping through our memories.

This is particularly true with the Scottish shortbread that if it was left unattended, could go missing in a matter of minutes given that no one is ashamed of taking out the last one from the jar or plate.

Sure enough, if a big batch is made, we don’t face such shortages, but this wasn’t always the case.

Shortbread was one time in history a luxury -as every dessert- that was only eaten by the rich and only on special occasions. Originally shortbread was made out of the leftover bread dough but over time yeast was replaced by butter giving the shortbread a crumbly texture.

The original meaning of short refers to the cookies texture too as short meant crumbly at one point of the evolution of the English language. No wonder butter came to be known through the centuries as shortening in the recipes.

As butter and more importantly sugar and flour became widely available so spread the shortbread too. Slowly, it reached all corners of the United Kingdom until in 2006 it was selected as a representative of the UK for Café Europe.

No small feat for such a humble beginning but others on the same list achieved similar heights in their respective country. Take the Gugelhupf in Austria or the almond Tarta de Santiago cake in from Spain.

Unfortunately, as the cookies availability have grown, our energy demand decreased and popping things -even unaware- into our mouth began to show themselves on our waist, among other places.

The problem is that cookies are like kindness in life.

They go unnoticed until they are gone missing. When we realize their lack in our life, we start to feel miserable. Sure, this is partly because we are addicted to sugar and quitting additive substances makes everybody miserable and unkind.

But it doesn’t have to be that way. Kindness exist until we can put a smile on our faces, and we can put a smile on until we can make cookies, even if we are on a path of nutritional enlightenment.

As shortbread don’t contain much more but one-part sugar, two-parts butter and three parts wheat flour, we don’t need to worry about much mixing all sort of raising agents in. All we need to worry about is to keep the dough together and that can be easily achieved by a variety of low carb keto friendly and best of natural flours.

Sweeteners are a hot topic nowadays and everybody has its opinion on which is best or worst so use, the one that fits well into the given diet plan and wait for one that good for us, good for the environment and above all tasty too.

Luckily, shortbread cookies aren’t requiring that much sweetness and if we are off sugar, we don’t require so much of any sweetener to get the same sweet feeling anyway. Ingredients:

  • 14oz / 400g Almond flour
  • 10 tablespoon / 150g Butter (room temperature)
  • 2 tablespoon Sweetener of choice
  • 1 teaspoon Vanilla extract
  • 1 Egg
  • 2 oz / 40g Chocolate chips

How to make Keto shortbread cookies:

  1. Preheat oven to 300°F / 150°C.
  2. Prepare tray with parchment paper.

  9. Leave them to cool completely.
