Gluten Free Pancake Mix

Healthy gluten free pancake recipe for the ones who want to enjoy a sugar free, dairy-free low carb breakfast with a guilt free pleasure.

There is that feeling when friends celebrate their birthday and we are asked to go out and have brunch with them. The feeling starts in our stomach and usually doesn’t go well if we are on a gluten free diet and friends are keep forgetting that. So if we are on a sugar free, low carbs diet we have got quite limited choices to go for. It is obviously not a problem as long as we’re at home and there are a tons of stuff to choose from to cook the way it fits us. But that doesn’t help us in a restaurant not mindful enough towards people following diets. Luckily the chefs are always happy to beat up a custom bacon, egg breakfast with some side salad.

That however only gets us that far when we once smell a maple syrup soaked pancake from the other side of the table. Luckily there are options (besides popping into our favorite gluten free breakfast place on the other side of the city) for a flour less pancake. Not complicated, healthy and equally delicious gluten free, dairy-free and sugar free pancakes mixed by hand in the warmth of our own kitchen.

Pancakes are one of everyone favorite breakfasts. Unfortunately, we only have a chance to make them at the weekends or when stuck home for whatever reason. Nevertheless it’s the perfect start for Saturday morning. So let’s see what goes into the gluten free low carb pancake mix:

Ingredients Gluten Free Pancake Mix | SunCakeMom

Ingredients:

  • ¾ cup / 180g Millet flour
  • ¼ cup / 30g Flax seed (ground)
  • 2 Eggs
  • ¾ cup / 200ml Unsweetened soda water
  • ¾ cup / 200ml Coconut milk
  • 2 Tablespoon Coconut oil

How to make:

1. Measure and put millet flour into a medium size mixing bowl.

2. Measure and grind flax seed until it has flour consistency.

3. Pour grinded flax seed into the bowl with the millet flour.

4. Break eggs and put them into the bowl too.

5. Measure out soda water and coconut milk.

6. Pour coconut milk into the mixing bowl whilst stirring the batter.

7. Mix well until the batter is smooth.

8. Heat frying pan on medium heat.

9. Brush frying pan with coconut oil before we scoop the batter into it.

10. When coconut oil starts sizzling, scoop or pour half ladle of batter in it.

11. Fry one side of the pancake then after about 30-40 seconds flip it over and get the other side until light brown.

12. Repeat it until all all of the healthy pancake batter is used up.
