Instructions
Preheat the oven 180°C/356°F.
Measure flour in a measuring cup or on a scale.
Mix baking powder into the flour.
Measure sugar and put it aside.
Break the eggs one by one. Separate egg yolks from whites. This step could be a bit tricky so don’t worry if you cannot do it at once.
Put yolks in one mixing bowl and whites into the other one.
Pour half of the sugar with the whites and the other half with the yolks.
Beat egg whites with the sugar until hard peaks form.
Mix vanilla extract yolk and sugar.
Beat egg yolks until you get a light yellow mixture.
Carefully fold in the flour with the egg yolks. If the batter is too hard to stir, put the water in alternating between the flour and the water.
When you have an even mixture fold in egg whites as well.
Try not to break the whites. It will give you the airy consistency after baking.
Spoon pastry into the muffin holders. 2 or 3 spoonfuls into one holder.
Decorate them with the sugar flakes.
Pop the muffin tray into the pre-heated oven for 15-20 minutes.
