3tablespoonsHoney or sweetener of choice

Dough
1tablespoonFresh yeast
1¼cupMilk
5cupsFlour
3mediumEggs

Instructions
Filling
In a small bowl, cream butter, cocoa powder and honey or sweetener of choice.
Dough
Knead Milk, flour, eggs, butter, and fresh yeast together.
Place the dough onto a 70°F – 80°F / 21°C – 26°C spot for 30 minutes to raise a bit.
Roll out dough on a floured surface to a rectangle shape.
Brush filling onto the squared dough. Sprinkle raisins on top.
Tightly roll the dough into a log.
Cut crosswise into 1″ / 2cm wide pieces. Place the pieces apart on the baking tray (A baking sheet will be useful here.)
Cover then place them onto a 70°F – 80°F / 21°C – 26°C spot for 60 minutes to raise. Brush the rolls with egg yolk.
Place the dough into the middle rack of a 350°F / 180°C preheated oven then bake until the internal temperature reaches 185°F / 85°C and the top is gets a golden brown color, which should happen in about 20-30 minutes depending on the oven. Let them cool a little bit before serving.
