I have already posted the perfect vanilla muffin recipe. This one is quite similar one, except this is the junior version of it. I have skipped some steps to make it manageable for the less experienced cooks.

The taste obviously going to be the same, the only difference is the consistency at the final product. So here we go. I also changed the amount of the ingredients to start the baking with. After some practice, try the other, upgraded version of it. Meanwhile enjoy baking and eating these delicious vanilla muffins. 😊

Ingredients:

This recipe dwells 12 muffins. If you want only the half of it you can half the ingredients easily.

  • 3 medium size free range eggs
  • 100 g flour
  • 50 g sugar
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract
  • Sugar flakes for decoration
  • 6 tablespoons water

How to make:

  1. Preheat the oven 180°C / 356°F.
  2. Measure flour in a measuring cup or on a scale.
  3. Mix baking powder into the flour.
  4. Measure sugar too.
  5. Break the eggs and put them into a clean mixing bowl.
  6. Pour the sugar into the bowl with the eggs.
  7. Mix and beat eggs with the sugar until you get a light yellow color. It will take some time (5-10 minutes). If you have an electric mixer it would take less.
  8. Mix in the vanilla as well.
  9. Carefully fold in the flour with the eggs. If the batter is too hard to stir, put some water in alternating between the flour and the water.
  10. Spoon pastry into the muffin holders. 2 or 3 spoonfuls into one holder.
  11. Decorate them by sprinkling sugar flakes or chocolate chips on top.
  12. Put them into the preheated oven for 15-20 minutes until they’re golden brown.
  13. Take vanilla muffins out and let them cool down before eating.
