Vanilla muffins recipe that can be made even by kids, with or without kids. Why am I emphasizing the kids bit? As I’m on a new adventure this summer and I’ve been teaching some children the basics of how to bake. Meanwhile, I have been also learning a lot of useful things from them. Now I see some things differently. After the first class I’ve realized that if something is crystal clear for me as I’ve learnt it during the years, it might not be as easy for some people without explanation.

So my posts are surely going to improve with some more detailed information consisting methods, ingredients, substitutes, kitchen utensils we’ll need to use for the recipe.

As perfect vanilla muffins were the kids choice to make next in the cooking class, luckily I had a recipe to use with them and share it on my site, as well. It has to be a great choice as I got a lot of votes from the students.

Kitchen utensils you will need:

  • Egg beater or mixer
  • Scale
  • 1 cup (to break and separate the eggs)
  • 2 medium size mixing bowls
  • Measuring cup
  • Tablespoon
  • Muffin tray
  • Muffin baking cups (I use silicone ones, they make your life easier)
  • Kitchen gloves

Ingredients:

This recipe dwells 24 muffins. If you want only the half of it you can half the ingredients easily.

  • 6 medium size free range eggs
  • 200 g flour
  • 100 g sugar
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla extract
  • Sugar flakes for decoration
  • 6 tablespoons water

How to make:

  1. Preheat the oven 180°C / 356°F.
  2. Measure flour in a measuring cup or on a scale.
  3. Mix baking powder into the flour.
  4. Measure sugar and put it aside.
  5. Break the eggs one by one. Separate egg yolks from whites. This step could be a bit tricky so don’t worry if you cannot do it at once.
  6. Put yolks in one mixing bowl and whites into the other one.
  7. Pour half of the sugar with the whites and the other half with the yolks.
  8. Beat egg whites with the sugar until hard peaks form. 
  9. Mix vanilla extract yolk and sugar.
  10. Beat egg yolks until you get a light yellow mixture. 
  11. Carefully fold in the flour with the egg yolks. If the batter is too hard to stir, put the water in alternating between the flour and the water. 
  12. When you have an even mixture fold in egg whites as well.
  13. Try not to break the whites. It will give you the airy consistency after baking.
  14. Spoon pastry into the muffin holders. 2 or 3 spoonfuls into one holder. 
  15. Decorate them with the sugar flakes. 
  16. Pop the muffin tray into the pre-heated oven for 15-20 minutes.
  17. Serve muffins hot or cold. Enjoy!
