Leftover Cake Recipe – Domino cake

When starting out in baking or in fact anything in life there are obstacles in front of us that we need to overcome, to become a better being of ourselves. These obstacles can be as easy to conquer as running for 5 minutes in the morning sunshine or bigger ones like an hour cardio session in a windy cold morning.
We make a plenty of mistakes when we jog on the steepest side of our learning curve. It is also the most exciting period because our hard-put effort yields results, we can be proud of. Thinking back at these times and achievements probably steals a slightly curling nostalgic smile onto our faces.

Looking back from the height of a marathon to the blatant 5 minutes run, is exactly like pondering how hard it was to make that damn sponge cake fluffy whilst decorating the Dobos torte. And hard it was.

We all have our own cross to bear. For some it is making the perfect pizza, other suffers equally to achieve the perfect Panettone. There are goals in everybody’s life and when one of the missions is accomplished, we realize that was only our meta, a step further to perfection because the summit is just so much higher.

It’s hard to see the sunshine through the clouds, though. When taking out the forth tray of sponge cake, dead flat as skimming stone in one afternoon, is when we consider taking up a different career in life.
After all sponge cakes are not that hard to make, are they?

Mixing up flour, baking powder with hard beaten egg whites and yolks shouldn’t cause distress on any level. It’s about that hard as making a gluten free mug cake in the microwave. Life doesn’t give us lessons to punish us, though. Lessons are to be learnt, to be soaked up, like sponge cake does the hot chocolate, to make us better.

Sure enough a bit of crying is allowed every now and then in the dark corner of the kitchen, next to the fridge, standing and eating up something that calms the nerves down without hurting the self-esteem but that’s about it.

We emerge stronger and better after every failure, remembering to read the instruction on the baking powder for correct measurement. It is also worth to note that if we use acidic ingredients like fruit, dairy and such, add a bit of extra baking/bicarbonate soda to level the extra acidity in the cake. The worst part though after every failure is, cleaning up the mess it left and the fallen. It is really hard to clean the kitchen without having something worthwhile at the end to gratify our suffering and pain caused by burnt trays, pans and greasy bowls with nooks and crannies.

The failure falls harder on the ones who were born into our instant gratification world but there isn’t everything lost. As long as we have some sort of cake, we have hope to enjoy the moment.

This Domino cake can be made out of just such a cake or even worse ones. The bits and pieces we cut off to perfect the shape of our masterpiece or the weekend leftovers that are not so popular anymore because we had a baking frenzy on Monday night.

Every stale piece of cake, every unwanted bit that dried out in loneliness and has no mold on them, is reusable with this recipe giving them new hope to be part of something amazing and glorifying their presence in this beautiful, challenging world.

Ingredients

Base

  • 2 cups / 300g Stale, leftover cake or cookies
  • 4 tablespoons / 60g Butter (room temperature)
  • 2 tablespoons / 16g Cocoa powder (unsweetened)
  • 1 tablespoon / 15g Jam of choice (Strawberry Jam, Apricot Jam Recipe)
  •  ¾ cup / 100g Raisins
  • 1 teaspoon / 5g Rum aroma

Frosting

  • ¾ cup / 140g Dark chocolate (sugar free)
  • Some white chocolate for decoration (the domino dots)

How to make Leftover cake

  1. Measure leftover cakes and add some crushed cookies to it in case there’s not enough leftovers. Put it in a medium size bowl to mix.Leftover-cake-recipe-process-2-SunCakeMom
  2. Dice up and soften butter if necessary. Take butter out of the fridge half an hour before use or put it in a microwave for a couple of seconds to be soft enough to work with easily.Leftover-cake-recipe-process-3-SunCakeMom
  3. Depending on what the leftover cake tastes like put unsweetened cocoa powder into the bowl as well. In our case it is a chocolate based (Sacher torte) leftover which is originally made with cocoa powder and chocolate, so it only needed 1 tbs cocoa powder. In any other non-chocolatey leftovers don’t hold back and put at least 2 tbs cocoa powder into the bowl followed by the jam of preference, butter, raisins and rum aroma.Leftover-cake-recipe-process-4-SunCakeMom

No Bake Sugar Free Chocolate Dessert – Domino

    I do love the way you have presented this specific concern and it does indeed provide me personally some fodder for consideration. However, through what I have witnessed, I basically wish as the remarks pile on that men and women remain on point and not start upon a soap box of some other news du jour. Still, thank you for this fantastic piece and while I do not concur with this in totality, I regard the point of view.
