Chocolate chips muffins

Easy to prepare chocolate chips muffins for chocolate lovers. Make your day with this delightful muffins and enjoy them with your tea or coffee.

Chocolate chips muffins recipe whether you are a grown-up or a kid, easy to prepare even easier to eat. Tried and tested in the summer baking class, simple to make by kids around you, helping eagerly. This chocolate chips muffin recipe is quite similar to the vanilla muffins as they were a great success previously. So if you see similarities with the vanilla muffins, it is not a coincidence.

Kitchen utensils you will need:

  • Egg beater or mixer
  • Scale or measuring cup
  • 1 cup or a glass (to break eggs safely)
  • Mixing bowl
  • Tablespoon
  • Muffin tray
  • Muffin baking cups (I use silicone ones, they make your life easier)
  • Kitchen gloves

Ingredients:

This recipe dwells 24 muffins. If you want only the half of it you can half the ingredients easily.

  • 6 medium size free range eggs
  • 220 g flour
  • 100 g sugar
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla extract
  • 100 g chocolate chips
  • 1 tbs unsweetened cocoa powder (optional if you fancy fully chocolatey muffins.

How to make:

  1. Preheat the oven 180 °C / 365 °F.
  2. Prepare muffin tray with the muffin baking cups. Set it aside.
  3. Measure flour in a measuring cup or on a scale.
  4. Mix baking powder into the flour evenly.
  5. Break the eggs one by one and put them into the mixing bowl.
  6. Measure sugar and pour it into the mixing bowl with the eggs.
  7. Beat eggs until get a light yellow mixture. It would take 5-10 minutes. Be patient.
  8. Pour in the vanilla extract as well.
  9. If you want your muffins super chocolatey this is the opportunity to mix the cocoa powder in with the eggs. If you decides to have the simple version of it, skip this step.
  10. Carefully fold in the flour with the eggs. If the batter is too hard to stir, put the water in alternating between the flour and the water.
  11. Finally pour chocolate chips into the batter and mix it in carefully but evenly.
  12. Spoon pastry into the muffin holders. It has to be 2 or 3 spoonful per holder.
  13. Pop muffin tray into the preheated oven for 15-20 minutes.
  14. Serve muffins hot or cold. Enjoy!
